The village of Evisa, in the heart of the Aïtone valley, is where Marina continues the precious tradition passed down to her by her mother, Françoise. A pioneer in the art of châtaigneraie, Françoise Ceccaldi discovered how to extract the best out of the fine and delicate Marron d'Evisa chestnut fruit. She takes great pleasure in reminding people that she was the first person in the region to purchase a chestnut peeling machine!
It is worth remembering that Evisa, located in exceptionally beautiful natural surroundings, is a cultural mecca in the domain of Corsican chestnut produce.
Marina, having grown up immersed in this culture as well as the teachings of her mother, has seamlessly picked up the baton. Her small holding, Insitina, handles the production of marrons glacés under the Dolci Corsi label. The chestnuts are peeled, brushed, finished by hand (for improved quality), rolled, processed (soaked for five days in delicious syrup making them beautifully tender), then coated in icing sugar and placed in an oven before being packaged into those pretty little boxes you see at Christmas. And for your further delight, Insitina have branched out into jams and candied fruit as well as delicious chestnut chip jam...
This is artisan produce made entirely from fresh fruit and citrus fruits: oranges, lemons, citrons, clementines, strawberry tree berries, figs and myrtle... all of Corsican origin with no chemical treatments, additives, preservatives or bulking agents!
