At first, nothing seemed likely to turn Philippe Delcroix towards the grand bucolic adventure he undertook just a few years ago. “I was an assessment mechanic at a garage in the Ajaccio region, and I just decided I wanted a change,” says the shepherd from Alta Rocca.

“My first idea was to start raising pigs, but most of my family and friends were sheep or goat farmers, so eventually I opted to raise ewes instead,” he explains. The former vehicle technician put his scrutiny and eye for detail to good use in his choice of animals: “I built up my flock with help from the Casabianda sheep- rearing centre.” With a herd of carefully-selected animals, a handsome new barn (which Philippe built himself), a new cheese-making facility, and soon the arrival of his daughter (currently finishing up her agricultural studies programme), Philippe Delcroix has all the ingredients necessary to continue treating his clientele to the family’s sumptuous range of artisanal cheeses.
