The Bonifato forest is a little corner of paradise. At the heart of this wild environment, the visitor can find Sandrine Schaeffer and Jean-Louis Guidoni’s farm. Located on the Figarella riverside, their goat-farming operation began in 1999. Jean-Louis, who owns part of the land, started a business providing horse rides a year earlier. But the couple very quickly felt the urge to raise livestock, goats in particular.

“Jean-Louis got some sheep so we could begin our herd, which only had 30 animals at first!” says Sandrine, amused. Impassioned by this animal, she bought 30 more the following year, once she’d pocketed her agricultural diploma. Now they have a herd of 200! However, the journey has not been without difficulties: in 2013 there was a fire in the cheese workshop caused by lightning. “We had to rebuild quickly, with a real feeling that we were starting over!” Jean-Louis smiled, but with the firm conviction of being on the right track; after all, Sandrine’s family name “Schaeffer” means “shepherd” in the damp, rainy region of Alsace!
