The son of a landed family from the Eastern plains, Guillaume Filippi initially turned his back on agriculture to pursue a career in the restaurant business. But when his father stopped his wine-making and fruit business, Guillaume realised he had to follow in the footsteps of his ancestors. On the eighty hectares of his estate, he decided to go into extensive livestock farming. He believes that there is only one way of producing quality beef: grass and space!

Every day, he has his cattle cover several kilometres to find the best grazing land for them. “When I embarked on this difficult and demanding career in livestock farming, my sole aim was to offer my clients healthy, tasty meat whatever their budgets!” he emphasises without any hesitation.

Now that his land is protected from neglect or from becoming fallow, Guillaume has taken on another challenge: restoring the ancient Genovese fort overlooking the grasslands that he hopes to transform into a meeting centre for food lovers in search of natural and good food products. His undoubted courage and drive should ensure that the old fort will soon be given a second life!
