Beef cattle farming is prevalent across the whole island, across mountains and grassland. The herds are permanently reared in grasslands or free range.

Raised alongside the mother, Corsican veal calves grow up free to roam their natural environment, benefiting from its natural resources.

The classic taste, quality and pink-coloured flesh successfully embody this huge rearing tradition.  It is, in fact, the diet of grass and maquis shrubland that give Corsican veal its very own flavour as well as the distinct colouring that sets it apart on the market stalls.

Corsican veal has been sold since 2008 under the collective brand, "Corsicarne". This is the amalgamation of an inter-profession initiative designed to provide consumers with a guarantee that the animals are born, reared and slaughtered in Corsica.
