Pietricaggio is a small village in Castagniccia, considered to be a site characteristic of the Corsica Regional Nature Park, which is perched almost 600 metres above sea level among centuries-old chestnut trees. In the village square, you can’t miss the beautiful stone house that Ange-Paul’s wife has prettily adorned with window-boxes brimming over with geraniums.
They both raise, in the best tradition – milking is carried out by hand of course! – some 140 goats. In the cheese dairy on the ground floor of their home, Ange-Paul’s wife turns almost 120 litres of milk into delicious cheeses – fromage frais, fromage blanc and melting cheeses. These already taste delicious barely out of their moulds!
The cheese is sold on site between April and November as, on this side of the mountain, the goats have their young in February, which means that authentic Brocciu and fromage frais is available throughout the summer.
Last but not least, make sure you take in the little village square, paved with stones that have been laid upright.
