Located in the heart of the village of Sotta, the Le Relais inn has been welcoming locals and visitors for 44 years.
Following in the footsteps of his grandmother and his mother, the inn has now been passed on to Jacky Pandolfi and his wife Véronique. Completing this family affair are the couple’s three children, Margaux, Jacques-Antoine and Pierre-Olivier, all giving a hand to ensure things run smoothly.
In charge of the kitchens is Véronique, rolling up her sleeves to ensure that the dishes coming out are of the highest quality. At Le Relais, visitors are treated to the family’s famous veal dishes, prepared in several different ways for diners on site or for sale in the deli as ready-made dishes.
The quality of the veal is the result of a passion for cattle farming, which has long been the Pandolfi family tradition.
In 1998, Jacky assembled his first herd, specialising in traditional Corsican veal butchery techniques in partnership with the island’s fine dining establishments – the experience led him to concentrate on building a herd of the highest possible quality.
He chose Aubrac cows, which have the best relationship with the Corsican landscape. These magnificent animals are carefully selected and carry the Registre Qualité Bovin (Bovine Quality Register) seal of approval; after growing up with this passion for this type of farming, soon it will be up to Jacques-Antoine and Pierre-Olivier to carry on the tradition.
For the Pandolfi family, it would seem, success is a question of passing on and sharing traditions.
