It's possible to be the son of... and yet still make a name for oneself. This is the case for Dominique Cesari, a pig farmer in Cozzano and the son of Gaspard, known for decades throughout the region and at the Ajaccio market for the quality of his charcuterie. But now, Gaspard is no longer “at the helm” of the farm, even if he still showers down precious advice to his son, who has taken over with the same attention to quality. “Even though I always helped my father make these products, at first I had a restaurant in Cozzano for a few years. But once my father decided to retire, I left everything in order to take over”, confides Dominique.
Now Dominique manages operations and the farm in their entirety, which he has progressively developed and modernised, while his brother is in charge of sales at the Ajaccio market. “Our clients are used to seeing us at the market and know our products. So it was important to maintain our presence and my brother does this very well”, says Dominique. Cesari, a reassuring traditional family production!
