Created at the beginning of the '80s by some Taravo shepherds who wanted to pool their resources and optimise the sales of their produce, the Taravo cheese cooperative now includes seven regional sheep and goat producers. Every morning, a precision ballet takes place at the entrance to Petreto-Bicchisano village. After the collected milk arrives, it passes to the expert hands of the cheesemaker, who will then get down to making cheese and Brocciu. “Here, only the amount of milk produced is greater. As for the rest, we’ve kept the same production and refining techniques as other shepherds on the island”, he explains. If you need to be convinced, just look at the comings and goings of regular or passing customers in search of still-warm Brocciu, or delicious tomme.

“I believe that customers are loyal to us because they trust us. They know where our milk comes from and can see us making our products every day. ” There's nothing to add to that!
