The Fondacci family is originally from Santa Reparata, and has always raised hundreds of sheep and produced farm cheese in the Balagne plains. François, Josée and Antoine’s son, is perpetuating this family tradition. It was in 2008 that the young man took charge of the family activity, spread out over four communes - Santa Reparata of course, Monticello, Île Rousse and Speloncato. “Three hundred and fifty animals that must then be brought back to the fold in Camario! But all of this comes almost naturally to me, the amount of time that I’ve observed it – and practised it! – by my father’s side. ” And Antoine is never very far away in case of an emergency!
François, who’s now 27, is equally well surrounded by the fairer sex! Josée helps him with the cheese making. “She taught me everything!” he says. “As is traditional in Corsica, it is the woman who takes care of cheese making. We mustn’t go against customs! ” jokes the young farmer. This is doubly assured, as his wife Julia also assists him in the field and with administrative tasks!
In the Fondacci family, cheese is above all a family affair!
