The farm cheeses from the GAEC Monte Padru are a family affair above all! In 2008, brother and sister, David and Chantal Costa, decided to take over the family farm established forty years prior, leaving behind their old jobs.
“Goat rearing is second nature to us! As children, we were stuck to our father’s coattails, or to our mother’s, as was my case, to help make the cheese”, says Chantal, the youngest.
The dynamic Laëtitia, David's wife, has been with them since the beginning of the adventure. “The career change was not so difficult for me. Admittedly, my paternal grandparents were also farmers! A crucial point: have a good teacher!" For this purpose, Laëtitia had a great teacher in her husband, for whom making goat cheese is a family tradition. But now the roles are carefully distributed - although they can sometimes be interchangeable in an emergency!
David is in charge of the sheepfold, which has 650 animals, Chantal is the Brocciu specialist and Laëtitia takes care of the cheese ageing and welcoming visitors to a brand new cheese making workshop. “Brand new, yes, but authentic! highlights Laëtitia with a smile
