“Dans le cochon, tout est bon! [We use everything but the oink!]” The Buresi family has lived by this old adage for four generations. Nowadays it is Hervé who is in charge of the family charcuterie in Cozzano but, before him, his father and grandfather had paved the way and worked hard to achieve their charcuterie’s reputation.
“At home, we never really questioned it, we learnt to live around pigs and butcher from a very young age,” stresses Hervé Buresi. For the past few years, his nephew Christophe has been assisting him with every stage of manufacturing their charcuterie. Whether they are feeding the pigs, leading them to summer pastures or turning them into prisuttu, coppa, lonzu, figatellu or panzetta, the two men always work together under the watchful eye of Hervé’s wife who is in charge of selling and marketing their products.
“Obviously we have tourists passing through sometimes, but, more often than not, our customers are regulars from here or elsewhere who come to us or order online. Nowadays, selling online is a real plus and people who already know our products can order remotely with complete confidence.” the young woman explains. Proof that we can continue traditional ancestral expertise and embrace modernity at the same time!
