There are some people who merge with the place they live because they have always lived in symbiosis with it. Pig farmer Vincent Paolantonacci is one of these people!

He has spent his entire life here in his village of Azilone-Ampaza. “To be honest, it never even occurred to me, my life was here, it was a given for me!” confides the breeder. He has always raised his pigs among the chestnut and oak groves of Ornano and produces charcuterie following simple and proven methods: animals in the open air and in their natural environment, a healthy and varied diet, and generations of charcuterie know-how.

The Collège Culinaire de France has also recognised him as a “high quality artisanal producer”. Today, with the help of his son, to whom he has passed on his knowledge, Vincent Paolantonacci still wanders through his estate with a sense of wonder, and will proudly show you an old millstone tucked away in the thicket, or a hundred-year-old oak tree that witnessed his birth. All in all, a simple life, but one that is fulfilled by the certainty and satisfaction of being in the right place and at the right time!
