Situated at the foot of a mountain, the Plaine du Liamone is a listed natural site of specific ecological interest for fauna and flora (ZNIEFF) as well as being one of the most important wetland areas of Corsica’s Western Coast. Its lush green pastures are a beautiful distraction as you drive by and the pastures upon which Ours-Pierre grazes his sheep are gently salted by spray from the nearby sea.
Coming from a long tradition of sheep farming, he has kept his own flock for over twenty years, and armed with this expertise, he has been able to fully meet EU requirements whilst remaining true to his family tradition. He likes to remind us that, "Sheep are the mainstay of Corsica's agricultural economy."
His herd is exclusively made up of Corsican breeds, and are all traditionally reared. The sheep milk is processed in a pristine laboratory where his skilful wife lovingly crafts creamy Brocciu cheeses along with the highly refined, fresh-tasting Tomme and Bastelicaccia style cheeses. Ours-Pierre tells us with great pride that, depending on the season, his herd are capable of producing up to 80% fat content!
