A small road that winds between dry stone walls leads to the old house marking the entrance to this estate. Here, everything bears the stamp of the history of these southernmost lands, shaped by the wind, the sun, and the work of men. Thousand year old zinzana olive trees from which Fabienne Maestracci obtains l’oliu d’aliva, a soft, subtle oil, with almond, walnut, and ripe olive flavours. It’s difficult work dealing with these old giants, who twist their long branches above dry, stony, bright white soil.
“Working with such old trees is a choice we made. We had more than enough land to plant young trees, but there’s another way to look at it. Preserving heritage so deeply linked to Corsica, that’s basically the meaning of our lives. ” And the fact remains that Fabienne was not satisfied with just the trees. After extensive studies, she has delivered some of the most beautiful Corsican tales in two books published by Albiana. She has also produced many cookbooks, including an anthology of Corsican cuisine: “Cucina Corsa, tempi fà”. In addition, she is an author of chronicles, stories where the island is the common theme, which she writes in the shelter of the walls of her big house.
Besides the small cottage, this home opens up in summer to accommodate guests in four comfortable rooms, where one is treated to the finest materials and most beautiful furnishings. Breakfasts are served in the shade of the great mulberry tree; homemade jams and cakes, healthy products and a pretty table. During the hot hours, one can take a dip in the swimming pool. Here, silence and rest are favoured, the real pleasure of living outside of time, and all this just minutes from Bonifacio.
