Jean-Luc Versini couldn’t contemplate living anywhere else other than in his village of Dui Sevi, and more precisely, in Sevi in Dentro. He therefore decided to farm the fruit of Corsica’s emblematic chestnut trees in Marignana, situated at the bottom of the lush green valley of the famous Gulf of Porto. 

The dense chestnut grove, located five kilometres above the village, extends over a number of acres that have been divided into plots. One of these plots, consisting of seven immaculate acres lovingly tended to by Jean-Luc*, is really taking off! 

Jean-Luc hasn’t kept track of all the hours spent bringing new life to this plot, or producing quality chestnut flour using traditional know-how. The chestnuts, mainly the Corsican Insidina and Tricchiudda varieties, are carefully harvested by hand and then dried over a wood fire and then sorted.

Jean-Luc then takes these patiently prepared chestnuts to the mill in Renno to be ground. He is rightly proud of the high quality produce that only his painstaking process can achieve. His fragrant, mild flour has been awarded the protected designation of origin (PDO) label. Tasting it is a must!
