His balancing act requires continual movement. Christian may very well spend his morning negotiating with an Emirate over the sale of the latest Rafale fighter jet and then pass the afternoon checking his olive trees. His colorful persona is a perfect reflection of the true spirit of Corsica's coastal coves: open, free, bold.

In 2005, he decided to reinvigorate the family estate, abandoned over a century earlier. "I was really saddened whenever I saw the estate, and its restoration today is a real source of pride," he explains. And he has every reason to be proud! This exceptionally beautiful setting now exudes an air of paradise. Olives are being picked once again and olive oil flows from the presses as it used to.

Thanks to sustainably-managed olive groves, Christian Mons Catoni and his partner Francis Santini have successfully introduced a range of varieties including yellow-golden nectar. "The production process involves considerable subtlety, requiring several stages that last the whole year long."

Having a very close bond with his native land, Christian is eager to showcase the whole array of local gastronomic treasures: wines, charcuterie, chestnut flour and cheeses all selected from among the best producers, laid out next to his own olive oil and first bottles of wine grown on his estate. You'll enjoy choosing in the elegant shop or at the tasting area set up at the estate entrance, where a breathtaking view over the Tuscan Archipelago islands awaits lucky visitors.
