Was it his name synonymous with olive tree that foreshadowed Olivier Morati's decision to transform the family business? Good question, because in 1976, the honey produced by Olivier's father Charles accounted for 80% of the farm's activities compared with just 20% for olive oil. Since Olivier took over, these proportions have been completely reversed!
He began by restoring the centuries-old olive grove (Biancaghja variety) to good health and planting another 37 hectares to grow both the Biancaghja and Frantoio varieties. Older trees produce olives every other year while the younger ones yield every year. Harvesting is performed traditionally: from January to May, the precious olives are collected directly into large hanging nets and immediately crushed at the on-site mill as part of a continuous production chain.
Produced from olives grown using strictly environmentally-friendly methods and only gathered when ripe, then prepared according to age-old artisanal processes, Olivier's "AOP"-certified olive oil has received several awards (gold medal winner at the Paris 2012 General Agricultural Fair).
Sweet, full of finesse and fragrance, this oil is a perfect accompaniment for salads and raw vegetable platters, enhancing the flavour of your dishes with plenty of flair. It is sold directly at the mill along with homemade honeys and excellent gingerbread.
Amidst the olive grove, Olivier and his wife Laure have remodelled a villa called Nida, offering a uniquely charming setting to host friendly gatherings.
