In the Conca d'Oru plains, not far from the Lac de Padula, lives Jean-Noël Guillaumin, who in 2004 achieved the status of professional cutler. Passionate about this craft since his teenage years, Jean-Noël has now been making his unique pieces for over fifteen years. From traditional Corsican shepherd knives to folding knives with complex and very sophisticated mechanisms, there is no standard template for the knives he makes.

I started off with an u stilletu (stiletto), an easily recognisable knife. Studies have shown how specific it is, especially its size and special shapes that were customary in Corsica in the 16th century. After my training, I wanted to produce pieces that were increasingly sophisticated. Therefore, it become crucial for me to raise the bar of my craft, to try and push the boundaries technically as well as in terms of creativity.” This craftsman refines his skill by acquiring state of the art materials; today he is able to manufacture his own laminated steel which he uses in his best creations.

Every new knife produced in the workshop is a challenge for me. Technically and aesthetically, I want them to match perfectly my clients' expectations.” Connaisseurs will be thrilled!
