“Who would have bet on the viability of an inn at the entrance of the Défilé de l’Inzecca?” jokes the charming Antoine Ottavi, owner of the L’Inzecca Pinzalone farmhouse inn. The establishment opened its doors in 1987. Antoine was only 21 then. “In the beginning, we were a kind of canteen for workers undertaking the construction of the Sampolo hydraulic dam, at the exit of the Strettes. Then, by word of mouth, we built a reputation for generous and authentic cooking”, says the farmer humbly.
Recognition as a “Ferme-Auberge” or farmhouse-inn was obtained seven years later with the introduction of terroir and farm products. It is clear that, for this trained chef, no challenge is impossible! When his brother Alain offered him his herd of sixty cattle, it was with real pleasure that Antoine accepted this new mission.
It has to be said that since childhood, Antoine had learnt from his forebears the techniques of charcuterie, cattle farming and other island traditions. A gamble on the future that the farmer has taken with panache, under the attentive eye of his oldest son, Stéphane, to whom Antoine hopes to pass on his expertise one day!
