Daughter, granddaughter and great-granddaughter of chestnut farmers, Aurore Sardo is a child of the chestnut grove. Dynamic and passionate, as a young girl she used to play in the trees and today she manages this 50-acre family farm, A Nebbiulinca, which produces flour using ancient traditional techniques.
Her "farina fornina", brown and biscuity, does full justice to the sweet taste of the Muratu chestnut. And Aurore is rightly proud of it. "What is important in the agricultural world", she explains, "is authenticity and ancestral knowledge. This tradition is our heritage, our identity!”
Aurore has always worked in the groves. As a teenager, she gave up her October holiday to harvest the chestnuts. This was a very special moment for her, a sort of magical ritual where she felt she was echoing the actions of her ancestors. The rest of the year, with her directness and warmth, Aurore promotes the chestnut groves, attending all the agricultural fairs in France and even succeeding in attracting the demanding Parisian delicatessen Fauchon! She has also studied Corsican geology and qualified as an agricultural manager.
Due to her patience and determination, she now has all the necessary skills to manage her land. At the same time, she has been developing a leisure centre for the past six years, to enable hikers to explore Nebbiu, offering guided visits of Muratu and the chestnut groves.
